Grilled Eggplant Gyros

In August while I was in Seattle with Kelsi, we ate at a small Greek “hole in the wall” somewhere decently close to the market. All I remember is we were starving after having just clamored up a giant hill, and typing that out just now makes me fearful about running a marathon there. Inside the tiny restaurant we scanned the menu for something vegetarian (Kelsi no eat meat.) but still very greek. Then we spied it, grilled eggplant. In a gyro.

As we watched, the cook pulled out a large firm deep royal eggplant and proceeded to slice up and grill the vegetable before our very eyes. As you can guess, they were completely ridiculously delicious. It molested my every thought for a month after I returned home. Of course I made it my mission to replicate the stupid thing as best I could. Guess what?

So easy.

Whether it be the beefcake you caught staring at your tits at the gym last week or the noodle-face you let stare at your tits while your watching How I Met Your Mother reruns, there is one meat above all others that will catch the attention of any man in a 15 mile radius. And I’m not talking about your damn vagina, but that’s pretty special too.

Bacon.
